Berry Galettes
I have wanted to make these rustic looking pastry desserts called galettes for awhile now. Today, I finally got around to making them.
Making the sweet pastry is worth the time as the result is so amazingly delicious. Although, you can use commercially purchased pastry as well. I highly recommend making this pastry as it's quick and easy.

· ¼ teaspoon salt
· 115 grams unsalted butter (cold & cubed)
· ¼ cup sour cream
· ¼ cup ice water
· 1 tablespoon vinegar
· ¼ cup sugar
· 2 pinches salt
· 1 tablespoon corn flour
· ¼ teaspoon vanilla extract
· 1 tablespoon milk
· Course sugar for sprinkling over crust
2. Place flour, salt and butter into a food processor and pulse until mixture resembles bread crumbs.
3. Add sour cream, ice water and vinegar and pulse a few times until the mixture forms a dough. Place in cling wrap and refrigerate for 1 hour.
4. Preheat oven to 200°C.
5. Place sugar, corn flour and salt into a bowl and toss in berries and vanilla extract until well combined. Set aside.
6. Lightly flour bench and divide dough into four portions and roll them out to about 18-20 cm circles. Transfer to lined baking trays.
7. Place berries in the centre, making sure to leave about a 2 cm border and fold in the edges.
8. Brush the crust with egg wash and sprinkle with some sugar.
9. Bake for 25-30 minutes or until golden brown. Allow to cool on tray for 5 minutes.
· Alternative you can make one large galette instead of four small ones. Round dough out to about 30 cm.

· 1¼ cups plain flour· ¼ teaspoon salt

· 3 cups mixed berries· ¼ cup sugar
· 2 pinches salt
· 1 tablespoon corn flour
· ¼ teaspoon vanilla extract
Egg wash
· 1 egg yolk· 1 tablespoon milk
· Course sugar for sprinkling over crust
Instructions
1. Line two trays with baking paper.2. Place flour, salt and butter into a food processor and pulse until mixture resembles bread crumbs.
