Christmas Wreath Cookies

Christmas is so much prettier with a touch of Tiffany Blue.  I wanted to make Christmas wreath cookies this year and so I couldn't help myself but add a touch of blue to it.

These cookies are so fun to make and decorate.  You can make the wreath in any colour you like and add different coloured sprinkles.  I piped a simple bow at the top but you could make a fondant bow or even a star to add to the wreath.

I piped small rosettes around the cookie to create the wreath but you could pipe small stars instead.  Another fun idea would be to could cut out the centre of the cookies before baking them to make them look like proper wreath.  I added shredded coconut to the centre of these cookies instead of cutting the centre out.

Christmas Wreath Cookies 

Ingredients

· 1 cup plain flour
· ¼ cup rice flour
· ¼ cup caster sugar
· 100 grams unsalted butter
· 2 tablespoons milk

Icing

· 2 cups icing sugar
· 1 egg white
· Lemon juice or water (approx 2-4 tablespoons)
· Food colouring (red red & turquoise – Americolor)
· Sprinkles

Instructions

1. Preheat oven to 160°C.

2. Line two trays with baking paper.

3. Place flours, sugar and butter into a food processor and pulse until mixture resembles bread crumbles. Add milk and pulse several more times.

4. Knead into a dough and roll dough to 3 mm thickness and cut out rounds using a 4 cm cookie cutter.

5. Place onto baking trays and bake for 15-20 minutes or until golden brown.

6. Allow biscuits to cool completely before decorating.

Icing

7. Place icing sugar, egg white and lemon juice into a bowl and using an electric beater beat on high for 3 minutes until mixture is smooth.

8. Divide mixture into two bowls. One bowl add blue or green food colouring for the wreath and in another bowl add red for the bow and decorations.

9. Place icing into a piping bag and pipe small rosettes around the edge of each cookie and add silver sprinkle balls randomly around the wreath.

10. Using the red icing, pipe a bow at the top of the wreath. Pipe random red dots around the wreath as decorations.

Tips

· Remember to allow biscuits to cool completely before icing.

· If the icing appears too thick add more lemon juice and if the icing appears too runny add more icing sugar.
