Matcha White Chocolate Cookies

I love Matcha desserts and I thought I would make some Matcha cookies.

These delicious Matcha White Chocolate Cookies are perfect for any green tea lovers.  They are crispy on the outside with a soft and chewy centre filled with a burst of green tea flavour.  They are perfect for afternoon tea or just a treat.

In keeping with the Halloween fun.  I decided to turn the cookies into cookie monsters.  They are so fun to make and you can decorate them anyway you like to make them scary or cute, of course.

Matcha White Chocolate Cookies 

Ingredients

· 170 grams butter, melted
· 2 cups plain flour
· 1 tablespoon green tea powder
· ½ teaspoon baking soda
· ½ teaspoon salt
· 1 cup brown sugar
· ½ cup sugar
· 1 teaspoon vanilla extract
· 1 egg
· 1 egg yolk
· 1 cup white chocolate chips

Decorations

· White chocolate chip buttons
· Mini chocolate chips
· White chocolate (melted)

Instructions

1. Preheat oven to 160°C.

2. Line two baking trays with baking paper.

3. Place brown sugar, sugar and melted butter into a large bowl. Beat using an electric beater until combined. Add vanilla extract, egg and egg yolk and beat until creamy.

4. Sift flour, matcha powder, baking soda and salt. Add to the butter mixture and mix until just combined.

5. Place one tablespoonful of cookie dough onto the baking tray. Make sure to leave about 2cm between each cookie.

6. Bake in oven for 8- 10 minutes. Leave on baking tray for 5 minutes before lifting onto a cooling rack.

Decorating

7. Melt some white chocolate over a saucepan of simmering water. Place into a small piping bag.

8. Pipe a small amount of white chocolate onto the white chocolate buttons and place mini chocolate chips to create the eyes of the cookie monsters.

9. Add the chocolate eyes onto the cookies by piping a small amount of melted chocolate first.

10. To create the mummy-look on the cookie monsters, pipe white chocolate across the cookies.

Tips

· Allow biscuits to cool completely before decorating them.

· Melted white chocolate can dry quite quickly. So melt it in small amounts or leave the melted chocolate over the simmering water. Alternately, you could add a small amount of oil or butter to make it a bit runnier and easier to work with.
