Strawberry Jelly Slice

I've always wanted to make a jelly slice but never got around to making it.  I was looking through some recipes I saved awhile ago and come across an image of a jelly slice.  I think it was a sign for me to make it and so I did.

This strawberry jelly slice is so delicious. It has a biscuit base, followed by a creamy lemon middle layer and a smooth jelly top.

It was enjoyed by everyone and I have already had requests for more.  This slice is fun to make and not only does it look visually appealing but it tastes so good.  I can't believe I waited so long to make it.  It's definitely a new favourite.

Strawberry Jelly Slice

Ingredients

· 200 grams Marie biscuits
· 185 grams butter, melted
· 2 teaspoons gelatine
· ¼ cup boiling water
· 395 grams can of condensed milk
· 2 lemons
· 1 packet strawberry jelly crystals

Instructions

1. Line a rectangle baking pan with some baking paper.

2. Place biscuits into a food processor and process to a fine crumb. Combine biscuit crumbs and melted butter into a bowl. Mix well and press mixture into a lined pan.

3. Place into the refrigerator to chill for 10 minutes.

4. Sprinkle gelatine over the boiling water and stir until completely dissolved.

5. When gelatine is cool, blend with the condensed milk and the juice of two lemons. Spread over the biscuit base.

6. Make jelly according to the packet instructions. Allow it to cool and carefully pour over the slice and chill.

7. When jelly is completely set, cut into squares using a hot, dry knife.

Tips

· If you don’t have a food processor, you can use a rolling pin to crush the biscuits into crumbs.

· When pouring the jelly layer, slowly spoon the jelly in at first to avoid making marks onto the middle layer.
